Terroir:
The Domaine Clef de St Thomas, 11 hectares, is made up of different plots planted towards Courthézon and also north of the village of Châteauneuf du Pape. To the south, the old Grenache wines express themselves on the rolled pebbles of the Serres. To the north, the Charbonnières on clayey sands.
The white grape varieties affirm their fruitiness in the west on sandstone terroirs for a very Châteauneuf typicality!
Here we are on a sandy-limestone soil.
Vinification:
The grapes are harvested manually in mid-September in boxes and vinified in the cellars located on the estate in the heart of the village. Total destemming, fermentation in vats, barrels and demi-muids at 15°C, then aging on fine lees of 3 to 4 months.
