Vinification:
Terroirs of Tours-sur-Marne _ vintage, a single year of harvest _ a single village, a single plot, old vines _ aging in bottles on lees, in our cellars for 7 to 8 years _ production 1500 bottles
Aromes:
A golden robe nuanced with a few reflections of straw. Fine bubbles. Silky texture with aromas of white-fleshed fruits, nuanced with notes of pastries, brioche and hawthorn blossom.
Accords mets & vins:
Phéérie will seduce you around a seafood buffet. It will sublimate a carpaccio of scallops, a turbot, a cod or a John Dory… and why not a pan-fried mirabelle plum.
