Vineyard Location:
Under the Rias Baixas Denomination of Origin (Galicia-Spain) is located in the parish of Arbo in the area of “Tea County”, which stretches along the right bank of the river Miño. Vineyards have an extension of 60 hectares Wine making process: After a rigorous selection in the vineyard, the grapes arrive to the winery goes to the selection table, where manually we discard unwanted grapes bunches. The grapes are de-stemmed and then goes to a paste exchanger to get a homogeneous temperature of about 12º. Then grapes goes to the macerator-press. Cold maceration takes place for 6-8 hours, and finally grapes are squeezed in the pneumatic press (3 press levels); then the must goes into a decanting tank for one day, after which the clean part is separated for fermentation (18ºC) and the sludge is filtered with the vacuum filter. Following fermentation, the wine is racked to separate it from the lees. Next process is cold stabilization, which entails subjecting the wine to a temperature of -5°C in an isothermal tank for one week to precipitate bitartrates. After that week, the wine is removed from the cold with a tangential filtering and then filtered amicrobically followed by bottling.
Tasting Notes:
Straw yellow with green flashes; it is clean and bright. It has a high intensity at nose; it is very fragrant, fruity and floral, fresh and subtle, recalling the pineapple, banana, peach and apricot. In the mouth is powerful, full-bodied and with an adequate alcoholic degree, balanced acidity, harmonious and with many pleasant nuances. Its persisting taste is pleasant, elegant and complete. In the mouth is very powerful.
Pairing:
Ideal to accompany all kinds of fish, seafood and sushi. Also with white meat, pasta and rice. Service Temperature: 9º C
