Appellation: A.O.C Cadillac – Côtes de Bordeaux
Harvesting method: Mechanical harvesting at first light in order to preserve the freshness of the bunches and their aromatic qualities.
Vinification: Spontaneous fermentation thanks to the native yeasts naturally present on the grapes, in thermo-regulated concrete vats. Vatting for around 25 days with gentle pumping-over extractions.
Aging: 5 to 10 years
Aging: 12 months in French oak barrels
Composition of the wine: Merlot (65%), Cabernet Sauvignon (18%) and Cabernet Franc (17%)
Terroir: Clay-limestone, Clay-Gravelous
Age of the vines: 30 years
Serving temperature: 17-18°C
