The chai of the Château Ad Francos, designed by carpenter and designer Stéphane Lebrun, is nested in the heart of the fortress’s walls. The plot harvest is led by gravity to stainless steel vats, allowing the full expression of the fruit. Once fermented, it continues its gravitational journey – as a trip back in time – towards the aging cellar where a natural spring, at the very origin of the castle centuries ago, provides the perfect aging conditions to the wine.
