Varieties:
- 45% Grenache
- 30% Syrah
- 15% Cabernet Sauvignon
- 5% Merlot
- 5% Carignan
Vinification:
Controlled fermentation temperature (24-28ºC)
Varieties vinified separately in stainless steel vats.
Maceration:
8-10 days. Malolactic fermentation in steel vats stainless Cold stabilization, filtration before bottling.
Ageing:
In stainless steel vats (on lees), 3-5 months approx.
Harvest:
Certified organic plantation (CCPAE)
Grenache and Syrah from 8 to 40 years. Altitude: 150-450m.
Alluvial soil for the low-lying vineyards, granitic soil and slate in terraces for those vines in higher areas.
Analysis:
- 14% vol. alcohol
- 5.1 g/l tartaric acid
- <2 g/l residual sugars
Production:
55,000 bottles (75cl.)
Tasting note:
Cherry color with violet rim. Intense aroma of red fruit In the mouth, powerful with a significant volume and final persistence due to "raising" on lees.
Pairing:
Ideal with all kinds of dishes. Being a young wine with certain structure, allows us to accompany it with sautéed mushrooms, pasta with cream-based sauce, wood-fired pizza, rice, white meat.
