CELLARS DE CAPCANES – Mas Collet Selecció

Varieties:

  • 40% Cabernet Sauvignon
  • 30% Grenache
  • 30% Carignan

 

Harvest: 

By hand, from the beginning of September to the middle of October. Grenache and Carignan from 15 to 25 years and Cabernet Sauvignon from 5 to 20 years. Clay and granite soils. Altitude from 150 to 450 m.


Vinification:

Maceration of 21-35 days, the varieties are vinified for separate Fermentation at controlled temperature (26-29ºC). Start of the malolactic fermentation in tank and finishing in boot.


Aging:

Aging of the wine for 9 months in American oak barrels and French, medium and light toast. Later aging in tank for 6 months before bottling.


Production:

60,000 bottles (0.75L) and 1,500 Magnum bottles (1.5L)
 

Analysis:

  • 14.5% vol. alcohol
  • 5.1 g/l tartaric acid
  • 1 g/l residual sugar
     

Tasting note:

Intense cherry color with violet reflections.. Ripe cherry, blueberries and soft and well-integrated oak aromas. Body medium with intensity in the ripeness presented by the fruit. Good acidity that keeps this wine well balanced with strong tannins soft Long finish in the mouth.
 

Pairing:

Red and white meats such as lamb or rabbit stews are pairings that work well with this wine. Sautéed vegetables, Mushrooms and creamy pasta dishes are perfect companions.
